GREEK & RUSSIAN PANCAKES



WATCH US MAKE THE PANCAKES
Ingredients for Greek pancakes
2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
2 tbsp sugar
1 cup Greek yogurt
2 large eggs slightly beaten
1 cup water
1/2 cup raisins (optional)

Method

First, sieve the flour into a bowl and add the baking soda, salt and sugar.

Next, crack the eggs and get whisking.

Gradually add the water, yoghurt and raisins and mix some more.

Now it's ready for the pan. For toppings, we recommend raisins and sultanas.
Ingredients for Russian pancakes
2 tablespoons unsalted butter, melted and cooled
2 cups unbleached all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon sea salt
1/4 teaspoon freshly grated nutmeg
2 eggs, lightly beaten
1/2 cup full fat yogurt
1 1/2 cups milk
2 tablespoons lemon zest
1 cup apple slices, cut into thin slices
Butter and apples slices for serving

Again, sieve the flower into a bowl and add the baking soda, sugar and nutmeg.

Now crack your eggs into a separate bowl (try not to split them like we did...).

Add the milk and yoghurt and drizzle in a dash of lemon extract. Use more if you're scared of tasting the vinegar.

Throw the contents of the bowl into the mixing bowl and stir vigorously.

Next, chop an apple into slices and dunk them into the pancake mix.

Melt the butter (we used a microwave) and try not to have it spit at you and burn your fingerprints off (like we did). Then add it to mix.

Add it to the frying pan and cook some pancakes. Don't forget to flip them.
